The Corporate F&B Manager will play a key role in the Senior Management team supporting the Director of Operations and CEO with the project management and development of new restaurants, as well as the increased standardization and improved efficiency of existing operations that they oversee. Numerous concurrent projects will have competing requirements for resources and time, all of which will need to be managed in a fast-paced environment. The ideal candidate will demonstrate creativity, possess strong project management skills, operating expertise and self-motivation.

KEY DUTIES AND RESPONSIBILITIES:

General

  • Prepare standard reports and dynamic dashboards to track performance against approved business plans for each restaurant
  • Review reports, prepare summaries, propose areas for improvement with action plans
  • Prepare materials for Month End, Quarterly and Annual Reviews
  • Support the Executive Team with proposals, presentations and other business development documents

Operations

  • Liaise with restaurant managers to ensure implementation of the company?s strategic and operational plans
  • Oversee management of cost of goods and ensure it meets budget at each restaurant
  • Ensure inventory templates are consistent across all restaurants with appropriate par levels in place
  • Ensure all invoices and inventories by venue are submitted to Accounting for bi-monthly inventory to meet deadline
  • Review Monthly Sales Mix by category by venue
  • Review Monthly Theoretical vs Actual Food Cost by venue
  • Oversee management of labour cost and ensure it meets budget at each restaurant
  • Review Weekly Management Schedules and Weekly Sales & Labour Tracker by venue against forecasted sales and ensure appropriate staffing levels are maintained
  • Review Weekly Sales & Labour Tracker against payroll timesheets and ensure accuracy in detailed payroll report
  • Oversee management of all controllable costs and ensure it meets budget at each restaurant
  • Oversee procurement management for each restaurant and ensure it is compliant with corporate policies and procedures

Sales & Marketing

  • Review updated Monthly Marketing and Events Calendar on a weekly basis
  • Liaise with Marketing Manager to develop and implement marketing and social initiatives for all venues
  • Oversee marketing spend and ensure it meets budget at each venue
  • Ensure Event Forecasts and Event P&Ls are approved and prepared in a timely fashion
  • Oversee management of banqueting team to ensure proper protocols are being followed and event execution meets corporate food, beverage and service standards

New Projects

  • Oversee design and construction for all new projects
  • Manage Project Budgets and timelines
  • Maintain Project Calendars, prepare materials and minutes for Project Status meetings
  • Assist in obtaining quotations as needed
  • Coordinate between Interior Designer, Consultants and Suppliers as needed
  • Coordinate between internal departments as needed

QUALIFICATIONS AND SKILLS:

  • Certification from an accredited Post-Secondary Institute in Hospitality, Restaurant Management, Business Administration, or related major, an asset
  • 5+ years of experience in upscale food and beverage management
  • Excellent knowledge of product trends and current awareness of industry standards
  • Passion for service excellence and a commitment to creating an exceptional employee experience
  • Experience with off-premise catering
  • Previous experience in Project Management an asset
  • Previous experience in managing Cost/Budget Plans an asset
  • Strong interpersonal and problem solving abilities
  • Ability to work well under pressure in a fast-paced environment
  • Responsibilities will require an adjusted work schedule, including evenings, weekends and holidays to meet company operating and project demands
  • Experience and well developed skills with a broad-range of business software including Excel, Word and PowerPoint are required
