About Us

We are a Northwestern Chinese restaurant which is known for Xi’an cuisine. Xi’an refers to the capital of Shaanxi, a region in the northwestern China known for handmade noodles and Terracotta warriors. It’s also one of the oldest cities in the country and has been a political and cultural force for 3,100 years. Xi’an cuisine is derived from the native cooking styles of Shaanxi province and parts of northwestern China. Xi’an cuisine makes elaborate use of ordinary materials, and is best known for its pork and lamb / mutton dishes. The flavor is strong and the taste is heavy. There is an emphasis on savory flavors such as salt, garlic, onion, and vinegar; sugar is seldom used. Cooking methods are mainly steaming, frying, and stir-frying. Due to its geographical location between the provinces of Shanxi and Sichuan, the taste of Xi’an cuisine resulted in both sour and spicy, in addition to the salty taste. In comparison to other Chinese cuisines, noodles consisted of greater portion than rice, but in contrast to noodles of Beijing cuisine, and to a certain degree, Xi’an cuisine, the noodles of Xi’an cuisine is nearly always wider, thicker, and longer.

Availability: Monday-Friday, or Wednesday to Sunday

Hours: 40 hours per Week

Job Type: Full time

Terms of Employment: Permanent

Main Duties:

  • Together with the owner and the general manager to oversees the operation of all locations including two Richmond locations and Vancouver location
  • Hire and train chefs and cooks
  • Supervise and direct the works of cooks and other kitchen staff in preparation, cooking, garnishing and presentation of food
  • Prepare signature dishes and soup bases with his or her secret recipes
  • Plan menus and ensure food meet health and quality standards
  • Analyze recipes to assign prices to menu items, based on food, labor, and overhead costs
  • Meet with venders in order to negotiate prices and order food ingredients and related cook equipment
  • Financial responsibility including control costs of required supplies, including ingredients, equipment, and labor cost of all locations
  • Ensure that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas
  • Record production and operational data on specified forms
  • Work closely with operations leadership to support performance elevation within the restaurants

Skills & Requirements:

  • At least 2 years of restaurant and Chinese cuisine experience as a chef or head chef
  • At least 3 years of experience in restaurant management or operation
  • Must hold a national certificate for Senior Level of cooking Chinese food
  • Experience preparing and executing Xi’an cuisines is a MUST (such as Mount Qi Pork Burger, Spicy Cumin Lamb Burger, Spicy Oil Sered Noodle, Stewed Pork etc.)
  • An assertive personality with excellent communication skills
  • Priority give to Canadian PRs and Citizens
